- Jaime Montes de Oca, Jr. Brings 20 Years of Culinary Expertise to the Hotel
WASHINGTON, D.C. – The Hay-Adams, one of the world’s leading luxury hotels, is pleased to announce the appointment of Jaime Montes de Oca, Jr. as Senior Executive Sous Chef. In this role, Chef Montes de Oca, who will work under Executive Chef Peter Schaffrath, will lead the Lafayette Restaurant culinary team in creating innovative American cuisine for the hotel’s guests.
Born and raised in New York City, Montes de Oca is a 1990 graduate of The Art Institute of New York City, formerly The New York Restaurant School. He has held posts at many highly regarded New York establishments, such as Vong, Gertrude’s, The Gramercy Park Hotel, and Tocqueville. He also brings a long history of restaurant and hotel experience, including at prestigious institutions such as The Waldorf Astoria, The Ritz-Carlton, The Plaza and Essex House, to The Hay-Adams.
Montes de Oca has worked with celebrated chefs, such as Jean-Georges Vongerichten, Laurent Manrique and George Mendes, during his culinary career. Most recently, Montes de Oca collaborated with Susur Lee in Washington, D.C. to open the Asian-inspired Zentan Restaurant at The Donovan House hotel. The two also collaborated previously to open Shang restaurant in the Thompson LES hotel in Manhattan.
